Chickpeas are very versatile and can be used in many dishes. They are high in protein, carbohydrates and fiber as well as in minerals such as calcium, magnesium and zinc. You can combine them with vegetables of your choice - cauliflower, eggplant, sweet potatoes, spinach and many more.
Ingredients:
-1 tablespoon Canola or oil of your choice
-1 medium chopped onion
-1 can chickpeas (drained and rinsed)
-1 cup cubed sweet potatoes
-1 large chopped tomato (or half can of tomatoes)
-1 teaspoon Patak’s curry paste or curry powder
-Salt to taste
-Chopped cilantro (optional)
Directions:
-In a saucepan, saute onion in oil at medium heat until it is soft
-Add salt, curry paste and tomatoes to the onion mixture
-Cook it for 5 minutes
-Add chickpeas and sweet potatoes to the mixture (can add small amount of water if needed)
-Cover the saucepan and cook at low to medium heat until sweet potatoes are cooked
-Add cilantro before serving it over cooked white or brown rice
